Abstract

The study of the effects of temperature and incubation time on the kinetics of hydrolysis of Nα-benzoyl-L-arginine ethyl ester by trypsin in a water–AOT–decane reverse microemulsion revealed a good correlation between the enzymatic activity and the structural properties of the protein, as found by IR spectroscopy.
